Spanish persimmon production has grown considerably in recent years. This fruit in its Bright Red variety arises spontaneously in the Valencian Community. Clasol controls this product in the field and warehouse, where through controlled atmosphere chambers the astringency is eliminated, to produce a sweet and fleshy taste on the palate.
